Creamy Irish Coffee

A twist on Irish coffee, this was a tasty little drink. I ended up doing three drinks out of it. The original recipe called for six servings. I don't get it though, it would have really have just been, basically, a shot of coffee! I guess it could be done, but with 6 ounces of coffee per cup, I would drink that in one gulp!!

So, here we go!

Ingredients:

4 cups strong, freshly brewed coffee
1/4 cup granulated sugar
1/2 cup Irish whiskey

Directions:

1) Place all ingredients in a saucepan and allow to simmer. DO NOT BOIL!!

Meanwhile:

Ingredients:

1 cup heavy whipping cream
2 tablespoons granulated sugar
2 tablespoons whiskey

Directions:

1) Whip the whipping cream. Once stiff, add the sugar and whiskey.


Then:

1) Pour coffee mixture into cup and top with spiked whipped cream.
