Peanut Butter Chocolate Crunch Cookies

Alright, the original title for these cookies were "holy crap these are amazing cookies" and I couldn't stick with that original name thus...the name change.

These cookies are incredibly simple to make. I must give a word of warning though, feedback, in general, from my "tasters" were that these cookies were amazing the first day they were made, but very quickly aged and became "tough" and "nougaty". Those that ate them the first and second day, absolutely loved them. Feedback after that was a bit more critical. If you make these, be sure to get them eaten within the first couple of days.

Also, using my larger cookie scoop, these made 60 cookies, so it was a boat load of cookies! Is this a cookie I would make all the time? To be honest, no. I would make sure I either had people to "pass" them onto or an event they were being made for.

So, here we go!:

Ingredients:

1 cup sugar
1 cup corn syrup
1 18 oz jar creamy peanut butter
6 cups corn flakes
6 oz chocolate chips

Directions:

1) Combine sugar and corn syrup in a large heavy pan. Stir until well blended. let it come to a boil and remove from heat. Stir in the whole jar of peanut butter (yes, the whole jar!). Mix well.

2.Add corn flakes to a large bowl. Pour peanut butter mixture over corn flakes and mix well, taking care to coat all of the corn flakes.


 3.With a tablespoon or cookie scoop, form into 2 inch balls.  Place them on a cookie sheet lined with parchment or wax paper.



4.In a double boiler, melt chocolate until smooth.
5.Drizzle the melted chocolate over the cookies.
