I stumbled across these little bad boys and they are not easy to walk away from. Dark chocolate, Baileys and pecans. YUMMERS!! They were simple to make as well. These, literally, disappeared from my home because people just kept popping them into their mouths!
The recipe doesn't call for it, but when the recipe was finished, the chocolate was much more of a truffle consistency than a hardened chocolate consistency. I ended up going back and dipping the clusters in melted chocolate chips. It gave the little treats an extra little punch, but this is totally up to you.
So, here we go!
Ingredients:
1 bag semisweet chocolate chips
3/4 cup Irish Cream Liqueur
1/3 cup whipping cream
2.5 cups pecan pieces
Directions:
1) In double boiler, melt chocolate chips. Add remaining ingredients and stir until combined and smooth. Remove from heat.
2) Drop by teaspoon fulls onto parchment/wax paper covered cookie sheets. Allow the chocolates to harden (approximately 1 hour)
3) If desired, return to a second bag of chocolate chips melted in a double boiler and dip a second time. Allow for second hardening.
