Chocolate Covered Strawberries...St. Pat's Day Style!



OK, let me tell you that I LOVE me some chocolate cover strawberries. I can devour them, but usually hold off due to the cost of them, plus I am always afraid to buy them from shops because I don't know how old they are. I once bit into ones I had purchased from a grocery store and bit into mold. FREAKED me out! I was always intimidated by the concept of dipping fruit, although I have taken on some really difficult tasks in the kitchen.

Well, the other day, I bought some really, really beautiful and fresh strawberries from Aldi and I couldn't see these being ground down into a strawberry margarita. Then, I thought about what I was focusing on St. Patrick's Day menus for the forum this month. So, what is a girl to do?? Chocolate covered strawberries covered with the colors of the flag of Ireland! Voila, they fit into my St. Patrick's Day menu!! God, I am good! : )

So, I was determined to come past my fear of covering strawberries and I jumped in.

1) First, take a bag of semisweet chocolate chips with 2 Tablespoons of canola oil and put them in the top of a double boiler, which has water in the bottom half . Not a fan of semi sweet chocolate, grab milk chocolate or white chocolate chips instead! Start it to come to a boil. Pay close attention so that the chocolate doesn't burn. Stir often.

2) While the chocolate is melting, wash your strawberries. Be sure to keep any stems and leaves intact. Allow to dry or VERY gently pat the strawberries dry.

3) When chocolate is melted, simply grab strawberry by the leaves and dip into chocolate.  Roll in the chocolate and let extra chocolate drip off back into the chocolate. Place on a cookie sheet which has been covered with parchment paper. Complete with remaining strawberries.



4) If desired, in a small pan, place 1/2 bag of vanilla chips and melt down with 2 tablespoons of canola oil. Break the white chocolate into the number of cups for the colors you would like. I did 2 separate cups as one of my colors was white. With the chocolate being so thin, simply dip a fork in chocolate and "splash" onto berries. I went crazy with this. When I tried to be show more control over it, it globbed up!



I will NEVER be intimidated by covering strawberries again!! I am so excited, I am planning more for my Easter trays!!
